"Would love to attend but I'll be out of town that weekend" means "I want everyone on your invite list to know that I travel extensively, and I want you to know that my social life is way too active to keep me in town long enough to attend your sad little event." The simple "Me and Sharon are definitely coming" means, "You invited both me and my ex so I'm warning her to stay home because I'm bringing my new girlfriend." Then there's the subtly hostile, "I'd love to come but I'm attending another event thrown by [Mutual Friend's Name]'s that same night," which translates to "I am a vindictive asshole."
